How to preserve fresh truffles?

We have collected 4 ways for you to preserve truffles and to always enjoy it at its best.

Preserve fresh truffles
You can keep the fresh truffle in the refrigerator, wrapping it with kitchen paper (the common Scottex) and closing it in a glass jar with a lid, possibly airtight (this is to prevent the aroma of the truffle from dispersing throughout the fridge). In this way you can keep the truffle up to 5-7 days, remembering to change the absorbent paper that wraps it daily, the purpose of which is to absorb the humidity released by the truffle.
Dry the truffle
It is a technique for a few enthusiasts and which may be more difficult than others. You will need a good dryer that will keep the temperature of 25-26 ° C for 48 hours. The procedure itself is very simple: slice the truffle into thin slices and place them in the dryer. Leave them to dry at 25 ° C for 48 hours and then transfer them to airtight jars. To use these slices of truffles, you can soak them in warm water: this water, properly filtered, will be very scented with truffles and you can use it to season your dishes!
In butter
Another way to preserve truffles for a long time is with butter. You will need muffin or ice cups. In a pan, melt the butter and wait until it becomes liquid and hot, but without frying it. At this point, add the sliced truffle to the butter and mix gently. As long as the butter is still liquid, pour the mixture into the muffin or ice molds and allow to cool. When they are cold, put them in the freezer: in this way you will already have the single portions of truffle butter, ready for your tagliolini! You can keep the truffle in butter in the freezer for up to 6 months.
Freeze the truffle
It is the easiest way to preserve the truffle for a long time, but if you do not have a good freezer, or a blast chiller, with this technique we could lose the truffle aroma. Brush and wash the truffle well under running water. Let it dry for a few minutes and then place it in the freezer in freezer bags. You can keep the truffle like this for up to 6 months.
